Objective
The student can describe the whole of ensuring the hygienic quality of food in Finland and can list the key instructions and regulations related to food hygiene in the field of registered food operations. The student can explain the measures used to ensure the hygienic safety of food in the food department.

- Actors, authorities, legislation and official instructions related to ensuring the hygienic quality of food.
- Basic information on microbiology and food contamination
- Food poisoning and their causes
- Handling of food according to instructions
- Personal hygiene in the food apartment
- Cleaning of the grocery store
- Self-monitoring and making a self-monitoring plan

Assessment criteria, approved/failed
Passed:
The student has attended the introductory lecture and received at least 34/40 points in the hygiene skills test.
Failed:
The student does not get the score required for acceptance from the written test.
Further information
A maximum of 20 students can be admitted to the course.
The hygiene pass at the end of the study period is subject to a fee (12 euros). The payment is made to Kamk's online store according to the instructions given in the introductory lecture.
